About the Shape - Pankiri

The Pankiri (パン切) is essentially a bread knife with a unique Japanese touch. The term “Pankiri” is derived from the Japanese words “Pan”, meaning bread, and “Kiri”, meaning to slice. This knife is characterized by its long, serrated blade, designed specifically for slicing bread. However, it’s not limited to just bread; it can also handle other ingredients like soft fruits and vegetables.

About the Steel - VG10

Developed by Takefu Special Steel Company in Japan, VG10 is also called V Gold 10. A stainless steel with high-carbon content which is very hard and tough, with great edge retention. Typically has an HRC of 60-61.

About the Finish - Damascus

Damascus or "Modern Damascus" finish refers to the watery or wavy light and dark pattern of the metal. Suminagashi (墨流し) which literally translates to "floating ink" is another word used for the finish.

About the Finish - Tsuchime

Tsuchime (槌目) refers to a hammered finish. This could be a result from the forging process or be added/hand-hammered by the blacksmith to create an indented and unique finish.
