Baba Hamono offers a variety of products, including Japanese and Western knives, sharpening whetstones, and cutting boards. The Kagekiyo series, known for its vibrant and distinctly Japanese “lustre red” finish made with traditional Japanese Kiso lacquerware, is one of their notable product lines.

About the Shape - Kiritsuke

The Kiritsuke (切付包丁/切りつけ), like most traditional Japanese knives, is a single bevel knife, meaning that only one side of the blade is ground to form a razor-sharp edge. A double bevel Kiritsuke usually refers to a variation of the Gyuto knife with a Kiristuke-style edge, and is often labeled as a Kiritsuke Gyuto or a K-tip Gyuto.

About the Steel - Shirogami #1

Developed by Hitachi Metals in Japan, the Shirogami (White) Steel No. 1 is a very popular steel among Japanese knife makers. The steel has a slightly more carbon than the more common Shirogami #2 which makes it a bit harder. Special care must be taken as knives made with this steel is prone to rust.
