About the Maker - Takeshi Saji

Founding member of the Takefu Knife Village, and certified "Traditional Craftsman (伝統工芸士)", Takeshi Saji (佐治武士) is the 3rd generation Saji Uchiamono Compnay. With nearly 50 years of experience, he has developed a number of his own techniques, unique ideas and original designs of custom knives.

About the Shape - Nakiri

The Nakiri (菜切り) knife is a Western-style Japanese vegetable knife with a thin and broad rectangular blade, a straight cutting edge, and a flat, blunt tip. It is specifically designed to excel at quickly and efficiently chopping, slicing, dicing and mincing vegetables.

About the Steel - R2

Developed by Kobe Steel in Japan, the R2 steel is a powered steel well known for excellent wear resistance. The steel is believed to have the same composition as the SG2 steel - when distributed by Takefu Special Steel.

About the Finish - Mirror

Mirror finish refers to a blade that has been polished to such a high degree that it reflects light, similar to a mirror. This type of finish not only enhances the aesthetic appeal of the knife but also provides practical benefits. It reduces drag when cutting and prevents food from sticking to the blade. The mirror finish is achieved through a meticulous process of grinding and polishing, resulting in a blade with a smooth, shiny, and reflective surface.

About the Finish - Tsuchime

Tsuchime (槌目) refers to a hammered finish. This could be a result from the forging process or be added/hand-hammered by the blacksmith to create an indented and unique finish.
