About the Maker - Yu Kurosaki

Well known for his unique blade profiles and finishes, Yu Kurosaki (黑崎優) is a well known and relatively young artisan based in the town of Echizen (越前). He was awarded the title of "Traditional Craftsman" (伝統工芸士) by the Japanese government in recognition of his excellence in traditional craftsmanship.

About the Shape - Sujihiki

The Sujihiki (筋引) literally translates to "tendon slicer", meaning it is intended for slicing boneless protein such as meat or fish, or terrines. The thin and short height profile reduces friction when slicing.

About the Steel - HAP40

Developed by Hitachi Metals in Japan, HAP-40 is a powder metallurgy High Speed Tool Steel. Capable of being heat treated to 68 HRC, HAP40 offers excellent edge retention. It is considered as semi-stainless, meaning it is still prone to rust but easier to maintain than carbon steel.
