About the Maker - Yu Kurosaki

Well known for his unique blade profiles and finishes, Yu Kurosaki (黑崎優) is a well known and relatively young artisan based in the town of Echizen (越前). He was awarded the title of "Traditional Craftsman" (伝統工芸士) by the Japanese government in recognition of his excellence in traditional craftsmanship.

About the Shape - Nakiri

The Nakiri (菜切り) knife is a Western-style Japanese vegetable knife with a thin and broad rectangular blade, a straight cutting edge, and a flat, blunt tip. It is specifically designed to excel at quickly and efficiently chopping, slicing, dicing and mincing vegetables.

About the Steel - VG XEOS

Developed by Takefu Special Steel Company in Japan, VG XEOS is a special steel with a fine microstructure created by a special melting method that improves wear resistance, strength, and quenching properties. Typically heat-treated to 61-62 HRC.

About the Finish - Migaki

Migaki (磨き) means polished but not necessarily as finely polished like a mirror finish. The finish gives knives a minimalist and elegant look though the degree of polishing varies from one blacksmith to the next.
