About the Maker - Aoki Hamono

Established in 1947, Aoki Hamono Seisakushi Co. (青木刃物製作所) produces under the brand name "Sakai Takayuki (堺孝行)". Their products maintains the traditional skills of Sakai's Japanese knives and demonstrate the skills of world class masters.

About the Shape - Yanagiba

The Yanagiba (柳刃) is a traditional-style Japanese sashimi knife with a thin and long blade that is mainly used to slice boneless fish fillets for sashimi or nigiri sushi.

About the Series - Homura

The Homura series includes two notable collections: the Guren and the Kogetsu.

The Homura Guren series is a set of premium Kurouchi knives, hand-forged by the skilled blacksmith Itsuo Doi using Aogami #2 steel. The name “Guren” or “Red Lotus” is inspired by the vibrant red flames made by burning fine pine charcoal in the forge. The handles on these knives are Half Rounded Octagonal Oak wood burnt-finished & dyed Japanese Lacquered (Urushi) that recalls the images of Japanese tradition.

The Homura Kogetsu series, on the other hand, features a Kasumi finish. The blade is carefully stretched out to achieve the best result with sharpness and persistence. The handle is made of Japanese yew (Taxus cuspidata) wood, with a Buffalo horn ring.

About the Steel - Aogami #1

Developed by Hitachi Metals in Japan, the Aogami (Blue) No. 1 steel is a high-carbon steel. The steel has a bit higher hardness and longer edge retention than Aogami #2 given a slightly more carbon content. Special care must be taken as knives made with this steel is prone to rust.
