About the Maker - Kitasho

Kitasho Co., Ltd. is a wholesale trading company of all bladed products, located in Seki city, Japan. It was established in 1964 and has been making cutlery and wholesaling since 1930. It produces high quality traditional knives suitable for everyday life, such as outdoor knives, kitchen knives, scissors, nail clippers, and various other cutlery products. It also has its own brand of Seki Kanetsune, which is named after a famous swordsmith who lived in the Muromachi period and made extremely keen and tough katanas.

About the Shape - Kiritsuke

The Kiritsuke (切付包丁/切りつけ), like most traditional Japanese knives, is a single bevel knife, meaning that only one side of the blade is ground to form a razor-sharp edge. A double bevel Kiritsuke usually refers to a variation of the Gyuto knife with a Kiristuke-style edge, and is often labeled as a Kiritsuke Gyuto or a K-tip Gyuto.

About the Steel - VG10

Developed by Takefu Special Steel Company in Japan, VG10 is also called V Gold 10. A stainless steel with high-carbon content which is very hard and tough, with great edge retention. Typically has an HRC of 60-61.
