About the Maker - Kitasho

Kitasho Co., Ltd. is a wholesale trading company of all bladed products, located in Seki city, Japan. It was established in 1964 and has been making cutlery and wholesaling since 1930. It produces high quality traditional knives suitable for everyday life, such as outdoor knives, kitchen knives, scissors, nail clippers, and various other cutlery products. It also has its own brand of Seki Kanetsune, which is named after a famous swordsmith who lived in the Muromachi period and made extremely keen and tough katanas.

About the Shape - Gyuto

The Gyuto (牛刀) is a type of Japanese kitchen knife that has a double-bevel blade, meaning it is sharpened on both sides. It is similar to the western-style chef’s knife, but it is usually thinner, lighter, and sharper. The name Gyuto means “cow sword” in Japanese, because it was originally used for slicing beef.

About the Steel - Aogami #2

Developed by Hitachi Metals in Japan, the Aogami (Blue) No. 2 steel is a high-carbon steel. The steel has a very high hardness therefore long edge retention. Special care must be taken as knives made with the Aogami Steel No. 2 is prone to rust.

About the Finish - Damascus

Damascus or "Modern Damascus" finish refers to the watery or wavy light and dark pattern of the metal. Suminagashi (墨流し) which literally translates to "floating ink" is another word used for the finish.
