About the Maker - Yoshimi Kato

Being the son-in-law of Hiroshi Kato (加藤宏) who was the founding member of Takefu Knife Village, Yoshimi Kato (加藤義実) is now the 3rd generation blade smith and head of Kato Uchihamono (カトウ打刃物). He is the original maker of the famous Masakage (昌景) brand.

About the Shape - Santoku

The Santoku (三德) is a versatile multi-use Japanese knife, famous for the translation of its name, ‘three virtues’. The three virtues are said to refer to the Santoku’s versatility in use for chopping, slicing and dicing, or the primary range of ingredients that it can be used for: fish, meat and vegetables.

About the Steel - Aogami Super

Developed by Hitachi Metals in Japan, the Aogami (Blue) Super steel has the highest amount of carbon among the Aogami steels meaning the greatest hardness and edge retention. Many knife makers see this steel as one of the best steels to work with. Special care must be taken as knives made with this steel is prone to rust.

About the Finish - Nashiji

Nashiji (梨子地) literally translates to pear-fruit-skin as the finish imitates the skin of an Asian pear. This finish is created by polishing away the dark oxides while retaining the rough texture. Some may say Nashiji is in the middle between Kurouchi and Migaki.
