About the Maker - Toshihiro Wakui

Toshihiro Wakui is a third-generation craftsman who initially specialized in hand-forging crowbars. However, as the demand for handmade crowbars declined, he shifted his focus to knife-making. He quickly mastered the art of knife-making in just four years under the mentorship of Kazuomi Yamamoto of Yoshikane. Now, he independently produces high-quality knives with excellent craftsmanship in his workshop. His knives are highly sought after and are available in various styles and sizes.

About the Shape - Santoku

The Santoku (三徳) is a versatile multi-use Japanese knife, famous for the translation of its name, ‘three virtues’. The three virtues are said to refer to the Santoku’s versatility in use for chopping, slicing and dicing, or the primary range of ingredients that it can be used for: fish, meat and vegetables.

About the Steel - Shirogami #2

Developed by Hitachi Metals in Japan, the Shirogami (White) No. 2 steel is a very popular steel among Japanese knife makers. Reasons behind its popularity include easy to sharpen and good edge retention. Special care must be taken as knives made with this steel is prone to rust.

About the Finish - Migaki

Migaki (磨き) means polished but not necessarily as finely polished like a mirror finish. The finish gives knives a minimalist and elegant look though the degree of polishing varies from one blacksmith to the next.
