About the Shape - Petty

Petty (ぺティ) knives are considered to be a smaller version of the Gyuto and are similarly used as an all-rounder knife to peel, slice, dice, mince, peel and trim a variety of smaller fruits, vegetables, herbs, garnishes and proteins.

About the Series - Saiun

The Seki Kanetsugu Saiun Series is a line of high-grade kitchen knives, designed by Mr. Kawamura, a highly skilled craftsman from Seki City. The Saiun Series knives are made from VG-10 cobalt stainless steel, which is known for its popularity and quality. The steel is forge-layered with stainless steel Damascus, resulting in a total of 33 layers.

One of the standout features of these knives is their convex blade profile, this design, along with their thin cutting edges, makes these knives ideal for precise cutting tasks.

The Saiun Series knives also feature a round Black Linen Micarta handle, a resin-impregnated wood, linen, paper composite imported from Spain. This handle is shrink-proof, very durable, and water-resistant. The handle's design is accentuated by a slightly slanted angle stainless steel bolster and a striking red fiber spacer, giving the knife a sleek and modern appearance.

Despite their high-quality performance and finish, the Saiun Series knives are reasonably priced, making them an excellent choice for both first-time users of Japanese knives and culinary professionals.

About the Steel - VG10

Developed by Takefu Special Steel Company in Japan, VG10 is also called V Gold 10. A stainless steel with high-carbon content which is very hard and tough, with great edge retention. Typically has an HRC of 60-61.

About the Finish - Damascus

Damascus or "Modern Damascus" finish refers to the watery or wavy light and dark pattern of the metal. Suminagashi (墨流し) which literally translates to "floating ink" is another word used for the finish.
