About the Maker - Jikko Hamono

Established in 1901 in the Japanese city of Sakai, Jikko Hamono (實光刃物) is considered as one of the top knife manufactures within the region. One of the unique aspects of Jikko’s knives is their “Hatsuke” method. “Hatsuke” is a special finishing method used to give the blades an even finer angle, making their knives even sharper and at the same time allowing the blade to remain sharper for longer.

About the Shape - Chuka Bocho

The Chuka Bocho (中華包丁) is a Japanese term for a Chinese-style chef’s knife, but it differs from its Chinese counterpart in several ways. The steel used in a Chuka Bocho is usually harder, allowing the knife to get sharper and stay sharp longer. However, this also makes the Japanese counterpart more delicate. The Chuka Bocho can handle both light and heavy jobs, including chopping meat and vegetables as well as poultry or fish bones.

About the Steel - Ginsan

Developed by Hitachi Metals in Japan, the Ginsan (Silver #3) is a carbon steel and what makes it special is that it is stainless at the same time. Ginsan is easy to sharpen and has a hardness similar to the Shirogami steels, making it ideal for users who want an easy to maintain steel.
