Located in Gotō Islands, Miyazaki Kajiya (宮崎鍛冶屋) is headed by Haruki Miyazaki, who works alone in the workshop and is known for using traditional techniques. The knives he produce are hand laminated, heat treated using pine charcoal, and water quenched.

About the Shape - Santoku

The Santoku (三徳) is a versatile multi-use Japanese knife, famous for the translation of its name, ‘three virtues’. The three virtues are said to refer to the Santoku’s versatility in use for chopping, slicing and dicing, or the primary range of ingredients that it can be used for: fish, meat and vegetables.

About the Steel - Aogami #2

Developed by Hitachi Metals in Japan, the Aogami (Blue) No. 2 steel is a high-carbon steel. The steel has a very high hardness therefore long edge retention. Special care must be taken as knives made with the Aogami Steel No. 2 is prone to rust.

About the Finish - Kasumi

Kasumi (霞) means "mist" and refers to the hazy appearance of the soft steel/iron cladding, in contrast to the fine polished cutting edge.
