It produces high quality traditional knives suitable for everyday life, such as outdoor knives, kitchen knives, scissors, nail clippers, and various other cutlery products. It also has its own brand of Seki Kanetsune, which is named after a famous swordsmith who lived in the Muromachi period and made extremely keen and tough katanas.

About the Shape - Gyuto

The Gyuto (牛刀) is a type of Japanese kitchen knife that has a double-bevel blade, meaning it is sharpened on both sides. It is similar to the western-style chef’s knife, but it is usually thinner, lighter, and sharper. The name Gyuto means “cow sword” in Japanese, because it was originally used for slicing beef.

About the Steel - AUS 10

Developed by AICHI Techno Metal in Japan, the AUS 10 steel has a higher carbon content than AUS 8, giving it a higher wear resistance. Typically heat-treated to 58-61 HRC.
