About the Maker - Jikko Hamono

Established in 1901 in the Japanese city of Sakai, Jikko Hamono (實光刃物) is considered as one of the top knife manufactures within the region. One of the unique aspects of Jikko’s knives is their “Hatsuke” method. “Hatsuke” is a special finishing method used to give the blades an even finer angle, making their knives even sharper and at the same time allowing the blade to remain sharper for longer.

About the Shape - Petty

Petty (ぺティ) knives are considered to be a smaller version of the Gyuto and are similarly used as an all-rounder knife to peel, slice, dice, mince, peel and trim a variety of smaller fruits, vegetables, herbs, garnishes and proteins.

About the Steel - Ginsan

Developed by Hitachi Metals in Japan, the Ginsan (Silver #3) is a carbon steel and what makes it special is that it is stainless at the same time. Ginsan is easy to sharpen and has a hardness similar to the Shirogami steels, making it ideal for users who want an easy to maintain steel.
