About the Maker - Takumi Ikeda

Learning from his master Katsushige Anryu since 2007, as an apprentice and a nephew, Takumi Ikeda (池田拓視) now leads Anryu Hamono. Ikeda-san has been forging the majority of Anryu knives and is known for a distinctive Damascus steel-style finish.

About the Shape - Petty

Petty (ぺティ) knives are considered to be a smaller version of the Gyuto and are similarly used as an all-rounder knife to peel, slice, dice, mince, peel and trim a variety of smaller fruits, vegetables, herbs, garnishes and proteins.

About the Steel - Shirogami

Developed by Hitachi Metals in Japan, the Shirogami (White) series steel is very popular steel among Japanese knife makers. Reasons behind its popularity include easy to sharpen and good edge retention. Special care must be taken as knives made with these steels are prone to rust.

About the Finish - Damascus

Damascus or "Modern Damascus" finish refers to the watery or wavy light and dark pattern of the metal. Suminagashi (墨流し) which literally translates to "floating ink" is another word used for the finish.

About the Finish - Kurouchi

Kurouchi (黒打ち) refers to the darkened steel surface as a result from the forging process which forms a coating of oxide. It is the most rusting finish of all but gives knives a traditional character.
