About the Maker - Masamoto Sohonten

Masamoto Sohonten (正本総本店) was founded towards the end of the Edo period in 1866 by Minosuke Matsuzawa, the first generation of Matsuzawa knife craftsmen. The founder devoted his life to developing crafting techniques and producing consistently high quality knives. Over six generations, Masamoto Sohonten has been refining and protecting the founder's integrity.

About the Shape - Deba

The Deba (出刃) is a sturdy and wide Japanese-style kitchen knife with a thick spine and a sharp blade edge that is pointed at the tip. It is traditionally used for cleaning, filleting and beheading whole fish.

About the Steel - Shirogami

Developed by Hitachi Metals in Japan, the Shirogami (White) series steel is very popular steel among Japanese knife makers. Reasons behind its popularity include easy to sharpen and good edge retention. Special care must be taken as knives made with these steels are prone to rust.

About the Finish - Kasumi

Kasumi (霞) means "mist" and refers to the hazy appearance of the soft steel/iron cladding, in contrast to the fine polished cutting edge.
