About the Maker - Kitasho

Kitasho Co., Ltd. is a wholesale trading company of all bladed products, located in Seki city, Japan. It was established in 1964 and has been making cutlery and wholesaling since 1930. It produces high quality traditional knives suitable for everyday life, such as outdoor knives, kitchen knives, scissors, nail clippers, and various other cutlery products. It also has its own brand of Seki Kanetsune, which is named after a famous swordsmith who lived in the Muromachi period and made extremely keen and tough katanas.

About the Shape - Petty

Petty (ぺティ) knives are considered to be a smaller version of the Gyuto and are similarly used as an all-rounder knife to peel, slice, dice, mince, peel and trim a variety of smaller fruits, vegetables, herbs, garnishes and proteins.

About the Steel - Aogami

Developed by Hitachi Metals in Japan, the Aogami (Blue) series steel has a high amount of carbon meaning good edge retention. Special care must be taken as knives made with these steels are prone to rust.
