Now the 26th generation of the sword making family located in Seki city, Kanefusa Fujiwara (藤原兼房)'s family is one of the very few who forge knives with over 800 years of history and tradition. They produces knives with a high reputation for excellent quality at an affordable price.

About the Shape - Petty

Petty (ぺティ) knives are considered to be a smaller version of the Gyuto and are similarly used as an all-rounder knife to peel, slice, dice, mince, peel and trim a variety of smaller fruits, vegetables, herbs, garnishes and proteins.

About the Steel - Shirogami #1

Developed by Hitachi Metals in Japan, the Shirogami (White) Steel No. 1 is a very popular steel among Japanese knife makers. The steel has a slightly more carbon than the more common Shirogami #2 which makes it a bit harder. Special care must be taken as knives made with this steel is prone to rust.

About the Finish - Nashiji

Nashiji (梨子地) literally translates to pear-fruit-skin as the finish imitates the skin of an Asian pear. This finish is created by polishing away the dark oxides while retaining the rough texture. Some may say Nashiji is in the middle between Kurouchi and Migaki.
