About my knvies

Below are the ones that I have on my knife bar (there is some more in the cupboard, too). The two on the left are a utility knife and a bread knife from Mercer, and the four on the right are Japanese ones.

For the Japanese ones, from left to right, they are: Sakai Takayuki AUS 10 45 Layers Damascus Tsuchime Gyuto 210mm with a walnut handle, Takeshi Saji SRS 13 Damascus Tsuchime Santoku 180mm with an ironwood handle, Kei Kobayashi SG2 Migaki Nakiri 160mm with a red lacquered wood handle, and Yu Kurosaki Gekko HAP 40 Gekko Migaki Petty 130mm with an oak handle.

Some of you may have noticed a pattern here and guessed what the other knives in the cupboard are. Yes, one of them is a Shunsuke Manaka ATS 34 Tsuchime Bunka 165mm. I enjoy collecting knives with the different makers and steels, that is why I do my best to classify knives this way on the site.
