About the Maker - Takeshi Saji

Founding member of the Takefu Knife Village, and certified "Traditional Craftsman (伝統工芸士)", Takeshi Saji (佐治武士) is the 3rd generation Saji Uchiamono Compnay. With nearly 50 years of experience, he has developed a number of his own techniques, unique ideas and original designs of custom knives.

About the Shape - Santoku

The Santoku (三徳) is a versatile multi-use Japanese knife, famous for the translation of its name, ‘three virtues’. The three virtues are said to refer to the Santoku’s versatility in use for chopping, slicing and dicing, or the primary range of ingredients that it can be used for: fish, meat and vegetables.

About the Steel - VG10W

Developed by Takefu Special Steel Company in Japan, VG10W is a variant of VG10 steel, made by adding tungsten (W) to VG10. This addition of tungsten precipitates and disperses hard, fine carbides, which contribute to improved wear resistance and ease of sharpening. Furthermore, the addition of tungsten also enhances the hardenability of the material.

About the Finish - Damascus

Damascus or "Modern Damascus" finish refers to the watery or wavy light and dark pattern of the metal. Suminagashi (墨流し) which literally translates to "floating ink" is another word used for the finish.
