About the Shape - Gyuto

The Gyuto (牛刀) is a type of Japanese kitchen knife that has a double-bevel blade, meaning it is sharpened on both sides. It is similar to the western-style chef’s knife, but it is usually thinner, lighter, and sharper. The name Gyuto means “cow sword” in Japanese, because it was originally used for slicing beef.

About the Series - Pro S

The Seki Kanetsugu PRO-S Series is a line of kitchen knives that are crafted by Kanetsugu, a distinguished maker from Seki, a city with a rich 800-year history in sword making. The knives are made from AUS-8 steel, which is known for its corrosion resistance. One of the defining features of these knives is their convex blade profile. This design, coupled with their thin cutting edges, makes these knives ideal for precise cutting tasks.

Unlike the PRO M Series, the PRO S Series knives feature a lightweight, hollow 18-8 stainless steel handle that is seamlessly fitted to the blade. These handles are very durable and will not shrink, unlike wood handles. For improved grip, the handle is textured with a diamond lattice pattern, reminiscent of the diamond pattern created by the silk cord used to wrap the handles of Japanese swords.

About the Steel - AUS 8

Developed by AICHI Techno Metal in Japan, AUS 8 has vanadium added to increase its hardness. Typically heat-treated to 58-59 HRC.
