About the Shape - Santoku

The Santoku (三徳) is a versatile multi-use Japanese knife, famous for the translation of its name, ‘three virtues’. The three virtues are said to refer to the Santoku’s versatility in use for chopping, slicing and dicing, or the primary range of ingredients that it can be used for: fish, meat and vegetables.

About the Steel - ATS 314

Developed by Hitachi Metals in Japan, ATS 314 is a stainless cobalt alloy steel with great hardness and wear-resistance. More commonly found in high-end salon shears though some knife makers do work with it.

About the Finish - Damascus

Damascus or "Modern Damascus" finish refers to the watery or wavy light and dark pattern of the metal. Suminagashi (墨流し) which literally translates to "floating ink" is another word used for the finish.
